We are committed to organic farming and do not use pesticides, chemical fertilizers or herbicides during the cultivation period.
We produce buckwheat that is kind to both the environment and the body. After harvesting whole buckwheat in the fall, the husks are removed and the kernels are ground in a stone mill.

★The buckwheat fields were created by cultivating land on a former ranch at an altitude of 337m on Yamamotoyama in Ojiya City, Niigata Prefecture.
This is a proud field that has good drainage and produces quality buckwheat.
The variety is Toyomusume.

Milling method: Stone-ground milling. Carefully selected and processed unpolished buckwheat is put into a sorting machine and separated by grain size.
The peeled fruit (whole) is ground in a stone mill.

By milling buckwheat seeds to a yield of over 97%, we are able to grind in the highly fragrant husks as well, resulting in fragrant, moist buckwheat flour that is easy to knead.

[How to make sobagaki]
Put this product in a bowl or other container, pour boiling water directly over it while stirring with thick chopsticks until the mixture is evenly mixed. Serve with soy sauce or other seasonings.
[Zenzai]
For a delicious zenzai dish, shape the soba kaki into the desired shape and add it to the dish instead of the mochi rice cakes.
[How to make crepes]
(1) Add a small amount of salt to 50g of this product and sift.
(2) Mix 1 egg and 1/2 tablespoon of sugar thoroughly.
(3)Add 1 tablespoon of unsalted butter and 1 cup of milk to (2) and mix well.
(4) Pour a thin layer of batter into a lightly oiled frying pan over medium heat.
(5) Once cooked, quickly cook the other side as well, then transfer to a plate and enjoy.
